This is a Ricotta Coconut Cake I made for a dinner where dairy was required as one of the ingredients. The Ricotta frosting and filling tuned out quite good, it was very creamy and not that sweet. On the other hand, the cake, which was a basic vanilla cake, turned out a bit dry, since I took it out of the oven when it was just right but with the carryover time it ended up over baking a bit. People still enjoyed it though
